Sometimes I just have to take a break and cook - Pork Enchiladas

For this recipe I used a 3lb pork bottom. You can use a shoulder or any cut you prefer. I served the pork taco style and enchilada style both were good. I would use triple the jalapeno and orange next time. Also I made this in my pressure cooker. Last time I used the slow cooker and I think the flavors were more pronounced.

One diced Jalapeno per pound of meat
Smashed Coriander and "Taco Seasoning" to coat.
Put in Pressure cooker with chopped vegetables and Juice of large orange and 1 can of enchilada sauce
Pickled sweet peppers and onions as garnish
Optional - Sliced Radish and Green Apple
Set per instructions. 15 minutes worked for me.
Pull meat apart with two forks. Broil for 5 minutes if desired.
