For this recipe I used a 3lb pork bottom. You can use a shoulder or any cut you prefer. I served the pork taco style and enchilada style both were good. I would use triple the jalapeno and orange next time. Also I made this in my pressure cooker. Last time I used the slow cooker and I think the flavors were more pronounced.
One diced Jalapeno per pound of meat |
Smashed Coriander and "Taco Seasoning" to coat. |
Put in Pressure cooker with chopped vegetables and Juice of large orange and 1 can of enchilada sauce |
Pickled sweet peppers and onions as garnish |
Optional - Sliced Radish and Green Apple |
Set per instructions. 15 minutes worked for me. |
Pull meat apart with two forks. Broil for 5 minutes if desired. |
